Bakery News:
Ryeinkorn? Adventure bread? What is that?
Wow... great question! Our new weekend special hearty loaf is the perfect loaf of bread to take along for any adventure. Hike, picnic, road trip or lounging with a charcuterie board by the pool! This is a seed heavy loaf with dried cherries. Keep reading for the nerdy part...
This loaf is made with both Northeast rye flour and einkorn wheat flour. Einkorn wheat is super cool and pretty unique as far as the modern what world is concerned. Einkorn is the most primitive form of wheat on Earth. It contains only 14 chromosomes, whereas modern wheat contains 42. Einkorn does not have the D chromosome, which seems to be connected with wheat intolerance in many humans. This makes Einkorn easier to digest and contains more protein and anti-oxidants than modern wheat. Whole grain rye flour has a robust flavor and hearty texture. A nutritious flour rich in fiber, vitamins, and minerals.
So why are we calling it ryeinkorn? Ryeinkorn isnt a thing.. we were just being goofy and mashed the wors togather. We needed something to call this bread during R&D and it kind of just stuck!

Breakfast:
take a slice and slather it with some marscapone, drizzle of EVOO & a sprinkle of flakey salt.
Charcuterie accompaniment:
Slice thin (toasted or untoasted) and serve along side all your favorite meats and cheeses
