Thank you for an awesome October! 

Here’s a look back on some of the food and pastries we served last month, and moments shared!


Bakery News:

October is perhaps our favorite month for pastries, if for no other reason than because for a few short days out of the year, Pan De Muerto returns.

Our recipe comes from the grandfather of our bakery manager, Selene. A few years ago our friend Brian Lance shared the story and recipe of Selene's Pan De Muerto as a guest writer in the  @wordloaf blog.

"Most pan de muerto is based upon a pan dulce—the sweet, soft enriched bread similar to brioche. The recipe I have to share with you today is a very different version, a traditional one from the tiny Mexican state of Tlaxcala. It contains guava paste and cinnamon and is topped with sesame seeds rather than the classic coat of melted butter and granulated sugar. It eats closer to yeasted spice cake than a soft roll, and it is absolutely delicious. (It’s perfect alongside a cafe con leche.)"

The Pumpkin Kouign Amann Cheesecake has returned 😊

Layers of flakey dough laminated with sugar. Baked till caramelized and filled with pumpkin cheesecake, topped with toasted merengue

A little extra note on pumpkin pie 🎃🥧

A lot of people are indifferent to pumpkin pie, or feel its underwhelming...

We just have to say... we truly belive this pumpkin pie is exceptional. A creamy - not gritty, pumpkin custard with the perfect level of spices... sweet - but not too sweet.
