The Big Connecticut Food Event 

The Upcoming Big Connecticut Food Event will take place Saturday 3/1/25 at The Yale School of Management in New Haven. Attendee tickets are not available through Eventbrite. Head over to ctfoodevent.com and click Get Tickets. Tickets are free but will be required to attend the event.

Looking back at December:

December’s filled Croissant was inspired by Ferrero Rocher

... because who doesn't love Nutella?!?!

Ponche Navideño is a traditional Mexican drink made during the Christmas holiday. The team used these ingredients to make their take on a pie version. Our flakey pie shell made from Ground Up Grains whole what pastry flour - filled with Mexican piloncillo, cinnamon sticks, sugar cane, pineapple juice, prunes, apples, guava, & stone fruit (tejocote)


📸 1 & 2) Mixed-Berry Apple Streusel Pie

Our flakey crust made with whole wheat pastry flour from Ground Up Grains, filled with tasty fruits. The bottom layer is spiced apples topped with a mix of raspberries and blueberries - with a hint of refreshing lemon zest - topped with oat streusel.

If you love our brioche... you will love this bread! Made with sweet potato puree and Maine Grain flour and baked in to a

📸 6) Apple Streusel Pies

Our flakey crust made with whole wheat pastry flour from Ground Up Grains, filled with loads of apples & topped with oat streusel.

Layers of tender spiced apples topped with a mix of blueberries and raspberries... all baked inside a flakey whole wheat crust 🌟


Atole is a traditional Mexican hot beverage similar to hot chocolate and thickened with cornmeal. We started doing these mini pies a few years back. We are lucky to have an Atole master in our Atticus Bakery crew. In our Atole, Odilia uses Organic yellow cornmeal from Wapsie Valley, NY. We then combine the Atole with pastry cream and fill a Ground Up Grains whole wheat pastry flour pie shell. Then we top with whipped cream and Mexican chocolate.

Projects like these help us honor the Latin American community at Atticus and our sister company, Chabaso. Here we all enjoy the cultural exchange that happens when we learn about each other through the food we make. It's a big part of what makes Atticus special.
