January - Atticus Happenings

We started off the month wishing one of our coworkers farewell and safe travels!
IN THE BAKERY:
Baguettes are back and we are stoked! Made with 100% Maine Grains high extraction flour. Leavened with both sourdough and yeast and long fermented overnight for max flavor! With a thin and crispy crust, and wild, open interior. Perfect for sandwiches or munching straight out of the bag. For now, these are only available Fridays and Saturdays. We have limited quantities at both stores:)
Atole Pie
We were very excited to bring back the mini atole pie for a limited time! Atole is a traditional Mexican hot beverage similar to hot chocolate and thickened with cornmeal. We started doing these mini pies a few years back. We are lucky to have an Atole master in our Atticus Bakery crew. In our Atole, Odilia uses Hopi Blue cornmeal from Barton Springs Mill in Texas (available for purchase at the Market). We then combine the Atole with pastry cream and fill a Maine Grains organic sifted spelt pie shell. Then we top with whipped cream and Mexican chocolate.
Projects like these help us honor the Latin American community at Atticus and our sister company, Chabaso. Here we all enjoy the cultural exchange that happens when we learn about each other through the food we make. It's a big part of what makes Atticus special.
Cinnamon Buns
We started selling 4 packs of cinnamon buns. The verdict is in and they will be sticking around! Fresh baked cinnamon buns will be available Friday - Sunday at the market for the winter season:)

AT THE CAFE:
We had a great time hosting the first of hopefully many wine dinners with our friends at Ungrafted Selections! Matt & Jason created a beautiful 5 course tasting menu to pair with one of our favorite producers on our shelf @cantinafurlani!
First Course

Stickler Loves the World - a silly, sweet picture book about a woodland creature who reminds us to appreciate the everyday wonders we often ignore.
